I seem to remember the *alla carbonara* refers to the fact that all ingredients were part of a typical coalminer's pantry - no need to refrigerate them, and they brought the taste of home right into the darkest mine.
Congrats on the recipe, I think it's very accurate, but please no garlic - we never ever use it in this dish.
